Mix vegetable kadai

If my husband is asked to place an order at the restaurant, he will blindly order for a mix vegetable kadai with tandoor roti and salad. Then he will ask the rest, whether they would like to have the same or something else. I have no clue on his fascination for this dish. I have now kind of given up on this.
I tried making it at home initially with loads of oil and ghee to emulate the taste. However, if it is made at home it should be healthy (Strange!) is what he says. So then, I asked him,  do not complain that it does not taste like the one we order from outside. 
Between this jugal bandi(verbal duel) we have settled for this version.



Ingredients
2 cups mix chopped vegetables (potatoes, cauliflower, french beans, green peas, carrots)
1 large onion finely (very) chopped
2 tson ginger garlic paste
3 medium tomatoes pureed
2 tspn chilli powder
1 tspn turmeric powder
1 tspn garam masala powder
1 tspn Kitchen king masala(this does the trick, if you don't have this add more garam masala)
2 tbsp curd (sour)
salt to taste
2 tbsp Oil
Method
1)Wash all chopped vegetables under tap water and let them drain in a colander
2) In a wok or pan, heat the oil.
3) Add the onions and saute them until the oil starts appearing on the edges of the pan
4) Add the tomato puree and all the dry powders except salt
5) Let it simmer for 7-8 min
6) Add all the vegatables and 1 cup of water .
7)Cover the pan and let it cook for another 8-10 min. Add water if required (preferably warm) 
8)When the potato is cooked(check with knife or tooth pick) add the curd
9) Let it simmer till it is dry 
10) Serve hot garnished with coriander

personally even I am also no fan of this veggie..but Pradnya its a good job done..trust me looks appealing:))

My FIL orders this veggie when we go out but he does not like what I make. Will try your way.
