Pitawich / Pita stuffed sandwich
I clearly remember the place that use to have a small outlet in my town's market area. I also remember that my mother used to take me along with her for veggie shopping once in a while when she used to ask whether I wanted to eat an icecream or pani puri as a treat - once in a blue moon is what we felt we were offered street food. Those days, until the outlet lasted, I never asked for anything else. Even for my small appetite I tried to nibble as much as I could on those half moon shaped sandwich stuffed in a paper napkin.
What helped further was that unlike today's time, there were not any options , there was just one variety, we order for a pita wich and we get it the way it was made by the person behind the counter.
It tasted amazing each time, no fuss , no complains about eating same kind of stuff ever....
Unfortunately the person was a little ahead for his time.......I was not very happy to find out that he left without trace one fine day..
Now with my culinary experiments...it was more than necessary for me to recreate the experience for my loved one's at home.
This is way different from what I ate, as it was probably at an age when I could not distinguish between a potato and a radish. I simply understood that I liked food or I did not want to have it ever. So I guess, it will need quite a bit of meditation for me to reach that part of the memory..
Ingredients
Pita Breads (1 per person)
2 cucumbers peeled and chopped roughly
2 tomatoes deseeded and cubed
1 onion, peeled and cubed
2 tspn black olives chopped
2 tspn jalapenos
2 tbspn crumbled paneer
1 tspn Zaatar powder (Use Vinegar oil + Olive oil dressing)
salt and black pepper seasoning
Method
1) Mix all the ingredients except the pita breads and toss them well
2) Cut the pita bread in halves
3) Heat the bases to slightly brown them
4) Open them in middle to form a pocket.
5) Stuff the salad in it.
6) Wrap in a paper napkin and serve.
You can also top it with olive oil , chilli flakes etc
